As parts supplies in certain areas start drying up for Bays (even in pick 'n' pulls, etc), does anyone know which, if any, Vanagon parts would be viable replacements.
For instance, is the steering column the same OD, and thus would the column switches (turn signal, wash-wipe) fit onto a bay column, with the bay steering wheel still being ably to be fitted?

This is research you can do on a case-by-case basis. Look up the part number of the bay, see if it is the same. The first three numbers may be off because of vehicle identification, but the last six may match.
